Ingredients ( For 4 Servings )
1 roasted chicken ( ready to cook )
400 g potatoes
1 clove garlic
400 g carrots
2 onions
2 sprigs rosemary
2 sprigs thyme
30 ml olive oil
1 apple
1 tsp sweet paprika powder
salt
pepper
olive oil to marinate
1- Preheat oven to 200°C ( 392°F ). Cut potatoes, carrots, onions and apple into 1 cm dice. ( 400 g potatoes / 2 onions / 400 g carrots / 1 apple )
2- Now, marinate potato, carrot, onion and apple dices with olive oil, salt and pepper. ( olive oil to marinate / salt / pepper)
3- Finely chop garlic, rosemary ad thyme. ( 1 cloves garlic / 2 sprigs rosemary / 2 sprigs thyme )
4- Combine chopped herbs, sweet paprika powder, olive oil, salt and pepper in a small bowl to create a marinade. ( 1 tsp sweet paprika powder / 30 ml olive oil / salt / pepper )
5- Brush chicken with the marinade on the inside and outside. Fill the cavity with previously marinated vegetables.
6- Place chicken in a baking dish and arrange the remainder of the vegetables around the chicken. Cook covered with aluminium foil in a pre-heated oven at 200°C (392°F) for approx. 20-30 min. Then uncover and finish cooking at 170°C (338°F) for approx. 30 min.
